Ark, Oh Parched One... Participants in our Berry Shrubs class learned about this lost (and recently revived) art from bartender extraordinaires Jennifer Colliau and Aaron Gregory Smith, who shared their recipes for vinegar-based shrubs using delicious seasonal berries.
The class learned all about shrubs, with a particular focus on pre-prohibition style traditional shrubs. Participants tasted already made shrubs, made 2 shrubs of their very own and learned about how to use them in cocktails. They each took home 2 quart jars of their own shrubs made with fresh seasonal fruit (apricots, strawberries, blueberries, raspberries) and herbs from the Ferry Plaza Farmers Market, as well as a booklet of recipes and tips.
