Fun with Ferments: Kimchi, Kraut, & Curtido - November 18, 2010

Despite an unexpected last minute room change, our ferments workshop went off well, with each participant taking home kimchi and either kraut or curtido.

Vanessa Barrington, author of the cookbook DIY Delicious, provided hands-on instruction in making a spicy Korean kimchi, a sauerkraut with cabbage and root vegetables, and Salvadorean curtido. Participants took home their own starter kimchi and their choice of curtido or sauerkraut. Finished samples were available for tasting and students left with recipes and other ideas for ways to enjoy their fermented vegetables.
